Corn, also called maize, is a cereal grain, and it's almost as old as 10,000 years and used
as food. It's very rich in fibers, vitamins, and minerals and it is grown as a major crop in most
parts of the world, and as for as gluten is concerned it's 100% gluten-free.

Corn is very rich in antioxidants it has not one but four antioxidants and all are

3, Zeaxanthin

1, Phytic acid

Corn is rich in this acid and it causes some problems, mainly in the absorption of zinc,
iron, and other minerals in the intestine, it can be a worrying factor
Although from new findings this phytic effect is somehow reduced if you take corn
along with onions and garlic, so somewhat this damage can be managed

2, Mycotoxins

Although they don't occur in corn but corn is very susceptible to fungi growth
particularly if storage conditions are more humid, This fungal growth start
producing toxins called mycotoxins, they have a very large adverse effect on
health, including the risk for cancer, and it should be taken very seriously, please
do not use corn in food if they are infected with fungi.

3, Corn intolerance

To some people, although it's very rare a very small percentage only, it starts reacting
just like gluten, so careful and watchful.

How corn fare in the gluten-free arena?

All said and done it's not only 100% gluten-free but at the same time full of vitamins,
minerals, and very rare antioxidants, and so it's very healthy, and can replace wheat in
